Mini Apple and Cheddar Grilled Cheese Bites

These Grilled Cheese Bites with Creamy Apple Butter Dipping Sauce are a sweet and savory twist on a classic, made with crisp Michigan Apples, sharp cheddar, and a tangy apple butter dip that’s perfect for snacking, sharing, or entertaining.

CREAMY APPLE BUTTER DIPPING SAUCE INGREDIENTS:
  • 1/2 cup mayonnaise
  • 1/4 cup prepared apple butter
  • 1/2 teaspoon lemon juice
GRILLED CHEESE BITES INGREDIENTS:
  • 8 slices of sandwich bread (white, sourdough, or your favorite)
  • 2 tablespoons room temperature unsalted butter
  • 1 cup shredded sharp cheddar cheese
  • 1 small Michigan Apple (like Honeycrisp or Gala), thinly sliced
  • Pinch paprika

INSTRUCTIONS:
  1. Make the Dipping Sauce: In small bowl, stir mayonnaise, apple butter and lemon juice until smooth.
  2. Make the Grilled Cheese Bites: If desired, cut crusts off of bread slices. Place bread slices on work surface. Spread butter evenly on one side of each slice.
  3. Sprinkle cheese on unbuttered side of half the slices. Arrange thin apple slices on top of cheese. Sprinkle paprika over the apples.
  4. Top with remaining bread slices, buttered side facing out, forming sandwiches.
  5. Heat large skillet or griddle over medium heat. Place sandwiches in skillet and cook 3 to 4minutes per side, pressing gently, until bread is golden brown and cheese is melted. Remove from heat and let cool 1 minute.
  6. To serve, cut sandwiches into halves or quarters. Serve grilled cheese bites warm with creamy apple butter dipping sauce.
