Apple Butter Thumbprint Cookies
This Apple Butter Thumbprint Cookie recipe is a spin on a classic, adding a delicious component: smooth Michigan apple butter. They are the perfect treat to share or gift to someone.

INGREDIENTS:
- 1 cup (2 sticks) unsalted butter, at room temperature
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 cups all purpose flour
- 1/2 teaspoon kosher salt
- 5 tablespoons Michigan apple butter
SERVING SIZE:
30 cookies
INSTRUCTIONS:
1. Preheat oven to 350 degrees F. Line 2 baking sheets with parchment
paper.
2. In bowl of stand mixer fitted with paddle attachment, beat butter, sugar, and vanilla at medium
speed 2 to 3 minutes or until light and creamy, scraping down sides of bowl occasionally.
3. Add flour and salt, and beat at medium speed 30 seconds until a soft dough forms, scraping
down sides of bowl once.
4. Roll dough into 1-inch balls and place on prepared baking sheets, spaced 1 inch apart.
5. Bake 12 to 14 minutes or until the edges are just lightly golden.
6. When cookies come out of oven, immediately use the handle end of a butter knife or
the bottom of a 1-teaspoon measuring spoonto gently press an indent in the center of each ball. If this is
difficult, spray the handle with a bit of cooking spray so the cookies don’t stick to it as much.
7. Fill each indent with about 1/2 teaspoon apple butter.
8. Transfer pans to wire rack and allow cookies to cool completely
