Sheet Pan Apple Spice Pancakes

INGREDIENTS:

Apple Topping

  • 1 apple, thinly sliced
  • 3 Tbsp brown sugar
  • 1 tsp ground cinnamon
  • 2 Tbsp extra virgin olive oil
  • 1/4 tsp ground allspice
  • 2 Tbsp walnuts, chopped (optional)

Pancake Mix

  • 1 Cup white whole grain flour
  • 1 Cup all-purpose flour
  • 1/4 Cup ground flax seed
  • 2 Tbsp brown sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 3/4 tsp salt
  • 1 Tbsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground allspice
  • 2 Cups milk
  • 2 eggs
  • 3 Tbsp butter, melted
  • 1 tsp pure vanilla extract
  • 1 apple, diced

INSTRUCTIONS:
  1. Preheat oven to 425°F. Lightly coat a rimmed sheet pan with non-stick cooking spray or line with parchment paper.
  2. Make the apple topping: In a medium bowl, combine sliced apple, brown sugar, cinnamon, olive oil, allspice, and walnuts (if using). Toss until the apples are evenly coated. Set aside.
  3. Mix the dry ingredients: In a large mixing bowl, whisk together flours, ground flaxseed, brown sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and allspice.
  4. Mix the wet ingredients: In a separate bowl, whisk the eggs, then stir in milk, melted butter, and vanilla until well combined.
  5. Combine batter: Slowly pour the wet mixture into the dry ingredients, stirring gently until just combined (avoid overmixing). Fold in the diced apple.
  6. Assemble the sheet pan: Using a spatula to help, pour the pancake batter onto the prepared sheet pan and spread evenly with a spatula. Top with the apple topping, distributing evenly. Drizzle any remaining sugary liquid from the bowl over the top.
  7. Bake: Bake for 10–13 minutes, or until the edges start to pull away from the pan and a toothpick inserted in the center comes out clean.
  8. Serve & enjoy: Cool slightly before slicing into squares. Serve warm—plain, or topped with yogurt, maple syrup, or nut butter.

Optional Add-Ons:
