Mini Michigan Apple Breads with Maple Glaze
Bake several loaves of these delicious mini breads so you have enough to enjoy with coffee, at a meal, or to give as a gift.
INGREDIENTS:
- 2 cups shredded Michigan Apples (peeled if desired)
- 1 cup brown sugar
- 1/2 cup buttermilk
- 1/2 cup canola oil
- 3 large eggs
- 2-1/2 cups white whole wheat flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 3/4 teaspoon nutmeg
- 1/2 teaspoon salt
Maple Glaze:
- 1-1/2 cups powdered sugar
- 1/4 cup maple syrup
- 2 tablespoon milk
- 1 teaspoon vanilla
DIRECTIONS:
Heat oven to 350°F. Spray 3 mini loaf pans with cooking spray.
In a large bowl, stir together the apples, brown sugar, buttermilk, oil and eggs.
In a medium bowl, combine the flour, baking soda, cinnamon, nutmeg and salt.
Add flour mixture to apple mixture and stir to combine. Divide batter into pans.
Bake for 30 to 35 minutes or until done. Cool for 10 minutes before removing from pans.
For the glaze, use a small whisk to mix together powdered sugar, syrup, milk and vanilla. Drizzle glaze over cooled apple bread.
