Mini Michigan Apple Breads with Maple Glaze
Bake several loaves of these delicious mini apple breads so you have enough to enjoy with coffee, at a meal, or to give as a gift.

Ingredients – Bread:
- 2 cups shredded Michigan Apples (peeled if desired)
- 1 cup brown sugar
- 1/2 cup buttermilk
- 1/2 cup canola oil
- 3 large eggs
- 2-1/2 cups white whole wheat flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 3/4 teaspoon nutmeg
- 1/2 teaspoon salt
Ingredients – Maple Glaze:
- 1-1/2 cups powdered sugar
- 1/4 cup maple syrup
- 2 tablespoon milk
- 1 teaspoon vanilla

Directions:
- Heat oven to 350°F. Spray 3 mini loaf pans with cooking spray.
- In a large bowl, stir together the apples, brown sugar, buttermilk, oil and eggs.
- In a medium bowl, combine the flour, baking soda, cinnamon, nutmeg and salt.
- Add flour mixture to apple mixture and stir to combine. Divide batter into pans.
- Bake for 30 to 35 minutes or until done. Cool for 10 minutes before removing from pans.
- For the glaze, use a small whisk to mix together powdered sugar, syrup, milk and vanilla.
- Drizzle glaze over cooled apple bread.
