Michigan Apple Summer Slaw
Light, crisp, and refreshing, this Michigan Apple Summer Slaw pairs sweet apples with a tangy Greek yogurt dressing for the perfect side apple slaw dish for picnics, barbecues, or weeknight dinners.

Recommended Apple Variety:
Fuji, Honeycrisp
Salad Ingredients:
- 2 small or 1 large Michigan Apples, such as Honeycrisp or Fuji, cut into matchsticks
- 1 lb. coleslaw mix
- ⅓ cup diced green onion
- Salt & pepper to taste
Dressing Ingredients:
- 1/4 cup plain Greek yogurt
- 1/4 cup mayonnaise
- 1 Tbs. apple cider vinegar
- 1 tsp. honey
Directions:
- In a large bowl, combine Michigan Apples, coleslaw mix, and green onion, and set aside
- In a small bowl, combine dressing ingredients and whisk until smooth.
- Add dressing to the slaw mixture and toss until evenly combined and coated with dressing. Season to taste with salt and pepper before serving.
