Michigan Apple Summer Slaw

Light, crisp, and refreshing, this Michigan Apple Summer Slaw pairs sweet apples with a tangy Greek yogurt dressing for the perfect side apple slaw dish for picnics, barbecues, or weeknight dinners.

Recommended Apple Variety:

Fuji, Honeycrisp

Salad Ingredients:
  • 2 small or 1 large Michigan Apples, such as Honeycrisp or Fuji, cut into matchsticks
  • 1 lb. coleslaw mix
  • ⅓ cup diced green onion
  • Salt & pepper to taste
Dressing Ingredients:
  • 1/4 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1 Tbs. apple cider vinegar
  • 1 tsp. honey
Directions:
  1. In a large bowl, combine Michigan Apples, coleslaw mix, and green onion, and set aside
  2. In a small bowl, combine dressing ingredients and whisk until smooth.
  3. Add dressing to the slaw mixture and toss until evenly combined and coated with dressing. Season to taste with salt and pepper before serving.
