Recipe developed by Lori Yates from Foxes Love Lemons.

Recommended Apple Variety:

Honeycrisp

Ingredients:
  • 1 tablespoon unsalted butter
  • 2 Michigan Honeycrisp apples, cored and sliced 1/4-inch thick
  • Nonstick cooking spray
  • 12 (6-inch) flour tortillas
  • 1 package (12 ounces) of fully cooked chicken and apple-smoked sausage
  • 8 ounces shredded pepper jack cheese
  • 1/2 cup barbecue sauce
Directions:
  1. In a medium skillet, heat butter over medium heat. Add apples and cook 5 to 6 minutes or until apples are slightly softened but not mushy, stirring occasionally.
  2. Heat griddle over medium heat; spray with cooking spray. Place 6 tortillas on a griddle and divide the sausage, cheese, and apple mixture over the tortillas. Top with remaining tortillas. Cook 5 to 7 minutes or until tortillas are golden and cheese melts, turning quesadillas halfway through cooking.
  3. Cut quesadillas into quarters and serve with barbecue sauce for dipping.
