Apple Hummus

Ingredients:

Apple Hummus

  • 1 can (16 oz) pre-cooked garbanzo beans
  • ½ cup Michigan applesauce (unsweetened)
  • 1 clove garlic
  • 2 Tbsp lemon juice
  • ½ cup olive oil
  • ½ cup tahini
  • 1 tsp salt

Apple Topping

  • 1 pomegranate
  • 1 Michigan Apple, peeled and diced
  • ¼ cup olive oil
  • 1 tsp lemon juice, zested

Other

  • Pita chips to dip
  • Vegetables to dip (carrots, peppers, and celery)
Serving Size:
  • Serves 4
Directions:
  1. To make hummus, using food processor, process chickpeas, garlic and ¼ cup chickpea liquid until smooth. Add lemon juice, salt, tahini, paprika and applesauce until smooth. Stream in olive oil. Season with salt.
  2. To make topping, peel and small dice Michigan apples, toss in lemon juice. Shuck pomegranate seeds. Fold pomegranate seeds and apple pieces together with lemon zest and olive oil.
  3. Put hummus in a bowl, make a divot on top of hummus, place topping in divot. Serve with pita chips and veggies.
