Apple Brussels Salad with Goat Cheese Fritter
Crisp Michigan Apples, shaved Brussels sprouts, and tangy goat cheese fritters create the perfect balance of crunch and creaminess in this fresh, flavorful salad.

Recommended Apple Variety:
Honeycrisp, Gala, Jonagold, Cripps Pink (Pink Lady), Fuji
Ingredients:
- 12 Brussels sprouts, shaved
- 1 Michigan Apple, sliced thinly
- 3 Tbsp dried cranberries
- 2 Tbsp pistachios
- 1 tsp salt
- 3 Tbsp extra virgin olive oil
- 2 Tbsp red wine vinegar
- 6 oz goat cheese
- ½ cup flour
- 2 eggs, beaten
- 1 cup panko breadcrumbs
Serving Size:
- Serves 1-2
Directions:
- Cut goat cheese into 1-inch pucks then bread each piece in flour, egg and breadcrumbs. Place in refrigerator.
- Combine remaining ingredients in bowl and toss to combine.
- Place salad on platter.
- In pan, sauté goat cheese in olive oil for 1-2 minutes until golden brown on each side.
- Place crispy goat cheese pieces on top of salad and serve.
