Apple Candy Cubes
These sweet little Apple Candy Cubes are like tiny bites of orchard magic! A fun homemade treat that both kids and grown-ups will love!
Recommended Apple Varieties:
Red Delicious, Gala, McIntosh
INGREDIENTS:
For Candies
- 3 Cups Michigan Red Delicious Apples or other red Michigan Apple, peeled and chopped
- 2 tablespoons lemon juice
- 1- 2 pieces of red apple peel for color
- 3/4 Cups white sugar
- 2 tablespoons powdered fruit pectin
- 1/4 Cup additional sugar
- Optional for enhanced color: 1-2 drops red food coloring added after cooking; alternatively, 1-2 tablespoons raspberry puree added to apple puree
For Coating
- 1/2 Cup of sugar
Serving Size:
Makes 35- 40 candies
INSTRUCTIONS:
- Add chopped apples, lemon juice and apple peel to a food processor. Blend until completely smooth.
- Pour apple puree into a saucepan and bring to a simmer over medium heat.
- Meanwhile, in a small bowl, whisk together powdered pectin with 1/4 cup sugar. Stir mixture into simmering apple puree.
- Add 1 and 1/2 cups sugar and continue cooking, stirring frequently, until mixture thickens/reaches 220 degrees, or becomes very thick and begins to pull slightly away from sides of pan.
- Line a square pan with parchment. Pour mixture into pan, spreading evenly. Let cool/set at room temp. overnight. Alternatively, use a square silicone mold to create perfectly shaped cubes.
- Remove from pan and cut into small cubes. Then toss cubes in sugar until coated and enjoy these apple candy cubes!
