Michigan Apple Pigs-in-a-Blanket
These apple-filled pigs-in-a-blanket make for a delicious breakfast for anyone, especially kids!
Recommended Apple Varieties:
Empire, Gala, Ida Red, Jonagold, Jonathan, or McIntosh.
INGREDIENTS:
- 2 cups complete pancake mix
- 1 1/2 cups water
- 12 brown and serve sausage links
- 1 can (21 oz.) Michigan Apple pie filling

INSTRUCTIONS:
- Prepare pancake mix with water according to package directions. Pour 1/4 cup of batter onto lightly greased skillet or griddle heated to medium-high. Cook until bubbles form on top; turn and cook 1 to 2 minutes longer or until golden.
- Meanwhile prepare sausage according to package directions. Heat pie filling in saucepan on medium heat until heated through, stirring frequently.
- To serve, place 1 sausage link in center of each pancake. Fold in half. Serve 2 pancakes per serving with warm apple pie filling over the top.
