Oat-Raisin Applesauce Cookies

Michigan Applesauce

Ingredients:
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 cup margarine, softened
  • 2 cups firmly packed brown sugar
  • 2 egg whites
  • 1 cup unsweetened Michigan Applesauce
  • 1 teaspoon vanilla
  • 3 cups raw, old-fashioned rolled oats
  • 1/2 cup raisins
  • Vegetable cooking spray

  • 4 dozen cookies, 2 1/2-inches in diameter

Directions:
  1. Preheat oven to 350° F.
  2. Stir together flour, salt, soda and cinnamon. Set aside.
  3. In large mixer bowl, beat together margarine and sugar on medium speed until combined.
  4. Add egg whites, Michigan applesauce and vanilla. Beat well.
  5. Add flour mixture, mixing on low speed until thoroughly combined.
  6. Stir in rolled oats and raisins.
  7. Drop by slightly rounded measuring tablespoon onto baking sheets coated with cooking spray.
  8. Bake at 350° F. about 13 minutes or until lightly browned.
  9. Cool 2 minutes on baking sheet. Remove and cool on wire racks.
  10. Store in airtight container.
