Oat-Raisin Applesauce Cookies

Ingredients:
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 cup margarine, softened
- 2 cups firmly packed brown sugar
- 2 egg whites
- 1 cup unsweetened Michigan Applesauce
- 1 teaspoon vanilla
- 3 cups raw, old-fashioned rolled oats
- 1/2 cup raisins
- Vegetable cooking spray

- 4 dozen cookies, 2 1/2-inches in diameter

Directions:
- Preheat oven to 350° F.
- Stir together flour, salt, soda and cinnamon. Set aside.
- In large mixer bowl, beat together margarine and sugar on medium speed until combined.
- Add egg whites, Michigan applesauce and vanilla. Beat well.
- Add flour mixture, mixing on low speed until thoroughly combined.
- Stir in rolled oats and raisins.
- Drop by slightly rounded measuring tablespoon onto baking sheets coated with cooking spray.
- Bake at 350° F. about 13 minutes or until lightly browned.
- Cool 2 minutes on baking sheet. Remove and cool on wire racks.
- Store in airtight container.
