Michigan Apple Caprese Sandwich
Fresh, crisp, and full of flavor, this Michigan Apple Caprese Sandwich layers sweet apple slices with grilled chicken, mozzarella, arugula, and pesto. Perfect for picnics, lunches, or easy on-the-go meals.

INGREDIENTS:
- 1 long whole grain baguette
- 4 tablespoons prepared pesto
- 4 cups loosely packed arugula
- 4 pieces grilled chicken (about 3 ounces each), or use grilled tofu
- 8 slices fresh mozzarella cheese
- 8 slices Michigan Apples
SERVING SIZE:
1 sandwich
INSTRUCTIONS:
- Slice the baguette horizontally and cut into 4 equal sandwich portions.
- Spread 1 tablespoon of pesto on the bottom half of each sandwich section.
- Layer in this order: 1 cup arugula, 1 piece grilled chicken or tofu, 2 slices mozzarella, and 2 slices Michigan Apple.
- Close each sandwich with the top half of the baguette and press gently.
- Serve immediately or wrap for on-the-go meals like picnics, beach days, or poolside snacking.
Notes:
- Apple prep tip: For best sandwich layering, slice the Michigan Apples into thin, round slices. You can core the apple first using an apple corer or remove the seeds after slicing.
- Make it veggie: Swap the chicken for grilled tofu or you could also use grilled tempeh.
- For extra flavorful chicken (or tofu): Marinade it in the fridge for at least 30 minutes in coconut aminos, low sodium soy sauce, or Italian salad dressing.
- To save time: Use pre-grilled chicken breasts from the deli.
- Storage: These sandwiches are best enjoyed the same day they’re made, but they’ll stay fresh for up to 2 days in the refrigerator or up to 8 hours in a cooler packed with ice.
