Maple Ginger Sweet Potatoes with Apples

Ingredients:

  • 1 1/2 lbs. sweet potatoes, peeled & cut into bit-sized pieces (about 5 cups)
  • 2 medium tart cooking apples, chopped (2 cups) (Michigan McIntosh, Paula Red or Rome)
  • 1/4 cup dried cranberries
  • 1 1/2 t. grated fresh ginger
  • 1/2 t. salt
  • 1/8 t. pepper
  • 1/2 t. cinnamon
  • 1/4 t. nutmeg
  • 1/2 cup water
  • 1/4 cup maple syrup or maple-flavor syrup

In a slow cooker, combine all but water and syrup. Mix the syrup with the water and pour over everything in the cooker. Cover and cook on low setting for 3-4 hours or on high for 1 1/2 hours.
