Michigan Apple Salad with Candied Bacon and Goat Cheese

Indulge in a Michigan Apple Salad featuring a balance of crisp apples, decadent candied bacon, and creamy goat cheese for a tantalizing blend of flavors.

Recommended Apple Variety: 

Ambrosia, Cripps Pink, EverCrisp®, Gala, Honeycrisp

Ingredients:
  • 6 slices bacon, diced
  • 1 tablespoon maple syrup
  • 1 tablespoon brown sugar
  • 3 Honeycrisp apples or Michigan Apple variety of your choice, cut into one-inch dice
  • 1/2 cup walnut halves, toasted
  • 4 oz. goat cheese, cubed
  • 3 cups baby arugula
Dressing:
  • 2 tablespoons maple syrup
  • 1/4 cup cider vinegar
  • 1/4 cup extra virgin olive oil
Serving Size:
  • 4 Servings
Directions: 
  1. Fry bacon until crisp, then drain off most of the fat.
  2. Add maple syrup and brown sugar to the pan, cook and stir until bacon is well coated with melted sugar. Remove from pan onto Silpat or parchment paper.
  3. Combine the remaining salad ingredients in a large bowl.
  4. Whisk together dressing ingredients and toss with salad. Garnish with bacon.
