Barbecue Chicken & Apple Kebabs

The Chef Next Door shares a summer BBQ classic with a Michigan Apple twist!

As the new school year quickly approaches and our minds instinctively turn to Fall, we need to remember that summer isn't quite over yet. There's still plenty of time for picnics, family BBQ's and grilling. Lots and lots of grilling! I've been grilling at least once a week, sometimes more, all summer long. I love it because cleanup is easy and there's no need to heat up the kitchen. That right there is the best part! 

One of my family's new favorite meals are these Barbecue Chicken and Apple Kebabs. It's seriously the easiest dinner to put together and is ready in no time at all. I served the kebabs over a bed of brown rice along with a tossed salad, and it was the perfect summer meal.

This is a dish to make not only in the summer, but well into the fall, too. I used Gala apples here, but as different Michigan apple varieties are harvested, it would be great to try some others as well. You can also add additional vegetables to the kebabs, like red peppers or zucchini. The nice thing is this dish is very customizable! 

Barbecue Chicken & Apple Kebabs
Serves 4
Prep time: 5 minutes
Cook time: 15 minutes

1 1/2 pounds chicken breast, cut into cubes
1 red onion, cut into wedges
2 Michigan Gala apples, cored and sliced (or your favorite Michigan apples)
1 cup barbecue sauce

Directions: 

1. Heat the grill to medium-high and lightly oil the grates.

2. Assemble 6 metal skewers, alternating the chicken, the onion and apple wedges. Season the skewers with salt and pepper.

3. Place the skewers on the grill and close the lid. Cook, turning occasionally, until grill marks are visible, about 10 minutes. 

4. Open the grill and baste the skewers with some barbecue sauce. Continue cooking, turning the skewers and basting them with more barbecue sauce, until the chicken is cooked through, about 5-6 minutes more. 

Serve the skewers over a bed of your favorite rice.
