Ingredients:
  • 2 tablespoons extra-virgin olive oil, divided
  • ½ cup small onion, finely diced
  • 1 pound of ground turkey breast
  • 1 small Michigan Apple (Fuji, Gala, or EverCrisp®), ½ grated and ½ sliced
  • ¼ red onion, sliced
  • 2 tablespoons fresh chopped parsley
  • 2 tablespoons fresh chopped thyme

  • Fresh ground pepper to taste
  • 4 large slices of white cheddar, goat, or provolone cheese
  • 4 whole grain or gluten-free buns
  • (optional) mayonnaise
Serving Size:

Makes 4 Burgers

Directions:
  1. Preheat a large skillet over medium-low heat. Once hot, add 1 tablespoon of olive oil and the onions. Sauté, stirring frequently, until just beginning to turn golden—about 5 minutes. Remove from heat and set aside.
  2. In a large bowl, combine the ground turkey, grated apple, chopped parsley, thyme, salt, pepper, and the cooked onions. Mix gently until just combined (avoid overmixing to keep the patties tender).
  3. Divide the mixture into 4 evenly sized patties, shaping them to an even thickness for even cooking.
  4. Return the skillet to the stove over medium heat. Add another 1 tablespoon of olive oil, then place the patties in the pan. (Note: If they don’t all fit comfortably, cook in two batches.)
  5. Cover the skillet and cook the patties for 5 minutes without flipping—this helps them sear and hold together. Once the bottom has begun browning, flip and cook for another 5 minutes, covered.
  6. Check the internal temperature with a meat thermometer. If near 165°F, add cheese and turn off the heat, keeping the lid on to melt the cheese.
NOTE: If not yet at 165°F, continue cooking (with the lid on) for another 2–5 minutes until done.
  7. While the patties finish, prepare your buns with leafy greens along with a slice of apple and red onion on the bottom half. (optional: add mayonnaise)
  8. Assemble and enjoy! Add the cooked patties, dress as desired, and dig in.
