Try This Tasty and Quick Breakfast from A Zesty Bite!

When I was growing up, in our house breakfast typically consisted of pancakes, waffles or toast served with a protein and some eggs. My parents would wake up fairly early just to ensure that we were well fed before jetting off to school for the day. Times have changed and I’d like to say that we do the same each morning for our kids but we don’t. It may be two out of five days where we really cook a hot breakfast but other than that it’s cereal or pop tarts (shocking).


This is where this Apple Pie Breakfast Parfait comes to mind. It’s a quick and flavorful breakfast that the whole family can enjoy. I mean Apple Pie for breakfast is really hard to turn down. The best part is that you can make or get the yogurt ready the night before so you just have to layer the parfait right before eating. If you do layer everything ahead of time just expect the granola to become a bit soggy so I recommend holding off until ready to eat.

Honeycrisp apples are by far my favorite and I always tend to buy these apples when I’m at the store no matter the cost. There is something about that extra crisp you receive in each bite. If you have another favorite apple please feel free to substitute it with this recipe.

Apple Pie Breakfast Parfait

Total time: 5 minutes
Yield: 2-3 servings

Ingredients
1 ½ cups plain yogurt
¼ teaspoon Apple Pie Spice
¼ teaspoon vanilla extract
¼ cup sugar
1 cup granola, divided
1 cup diced Honeycrisp apples

Directions:
In a bowl combine yogurt, apple pie spice, vanilla and sugar.

Place ½ cup granola at the bottom of a bowl or jar. Then place ½ of the yogurt on top of granola. Top it off with ½ cup apples.

Repeat with the other bowl or jar.

Tip: You can substitute plain yogurt with vanilla but may need to alter sugar amount.
