Roasted Apples: An Unexpected and Healthy Side Dish
Having grown up and lived in Michigan for the majority of my life [thus far], apples have always been a staple in my diet- and rightfully so! And now as a registered dietitian and mother of two young sons, I’m making sure their first foods and favorite fruits include apples.
While many think apples are just for snacking, I like thinking outside the box when it comes to cooking with them. I was even more inspired to boost my apple recipe repertoire when I attended a Michigan Apples Blogger Tour last fall. After the tour, I created Oven-Roasted Apples and Pears with Onions and Apple Pumpkin Soup. Apples as a side dish are such a hit with my toddler and husband that I decided to take another go at roasting apples! So here you have it: Roasted Apples with Cauliflower and Pecans.
Recipe: Roasted Apples with Cauliflower and Pecans
Serves: 4
Prep Time: 10 Minutes
Cook Time: 25 minutes
Ingredients:
1 Red Delicious Apple, cubed
1 head of Cauliflower, cut into small florets
½ cup of Pecan pieces
2 teaspoons of dried Rosemary
3 tablespoons of Olive Oil
Salt, to taste
1. Preheat your oven to 350. On a rimmed baking sheet, toss all of the ingredients together.
2. Roast for 25 minutes, tossing once or twice.
3. Serve warm. Add salt as needed.
