These Apple English Muffin Sandwiches combine the classic flavor combination of Michigan apples and peanut butter, with a little extra fiber from the whole grain English Muffin.
I always get a little giddy when I create a new recipe from ingredients we always have on hand in my family kitchen. Michigan apples? Check. English muffins? Check check. Peanut butter? Check check check. Put them all together, throw some spices on top, and you have one simple grab n’ go breakfast or shareable snack.
What I love about this recipe is that it’s the perfect mix of protein, carbohydrates, and fiber. And the perfect combination of flavors. Who doesn’t love apples and peanut butter?! I know my toddlers do. All three of them. That’s why I serve these Apple English Muffin Sandwiches on the regular. They are simply perfect as a main meal or snack that everyone can share. Not enough time to heat them? No worries. They taste just as delicious warm or cold. Have a nut allergy in your house? Then swap out the peanut butter for sun butter or your family’s favorite cheese. Apples and cheese go together just like apples and peanut butter in my opinion. Sweet, savory, and creamy, who could ask for anything more?!
Ingredients:
3 English Muffins
1 Michigan Honeycrisp Apple, sliced thin
¾ cup peanut butter
2 tablespoons white sugar
1 tablespoon ground cinnamon
Instructions:
Preheat oven to 425. Split English Muffins and place on baking sheet. Spread 1-2 tablespoons of peanut butter over each muffin. Top with 3 slices of apple.
In a small bowl, combine sugar and cinnamon. Using a teaspoon measure, sprinkle over the top of the apples.
Bake on the top oven rack for 10-12 minutes. Serve immediately.
