Gather ‘Round, Megan’s Making an Apple Fritter Cake!

Don't you just love apple season? West Michigan (where I live) is full of apple orchards and one of my favorite fall activities is going apple picking and figuring out fun new ways to use up all the apples I just picked. 🙂 That's where this recipe comes in. You are going to love this apple fritter cake! It is chock full of cinnamon sweetness, baked apples, and topped with a delicious powdered sugar glaze. Yum!! The cake itself is light and buttery, and very moist. It is so full of tender baked apples that it almost wants to fall part as you cut it. But that is not a problem, because undoubtedly you will want to put each slice in a bowl and pile it high with vanilla ice cream before eating it anyway. 🙂

To make the cake you layer the apples and brown sugar/cinnamon mixture on top of the cake batter, repeat, and then swirl it all together. The end result is basically an apple fritter baked into a cake – so good!! I hope you try this apple fritter cake during apple season this year- you will want to make it again and again.

Apple Fritter Cake

For the cinnamon sugar mixture:
1/3 cup light brown sugar
1 teaspoon ground cinnamon

For the apple mixture:
2 apples, peeled and chopped
2 Tablespoon granulated sugar
1  teaspoon cinnamon

For the cake:
2/3 cup granulated sugar
1/2 cup butter, softened
2 eggs
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 3/4 teaspoons baking powder
1/2 cup milk

For the glaze:
½ cup powdered sugar
1-3 Tablespoons milk

Preheat oven to 350 degrees F.  Line a 9-inch cake pan with a circle of parchment paper, then spray the pan liberally with cooking spray. 

Make the cinnamon sugar mixture: Mix brown sugar and cinnamon together in a bowl. Set aside.

Make the apple mixture: Mix the apples, granulated sugar, and cinnamon together in a bowl. Set aside.

Make the cake: In a  medium-sized bowl, beat granulated sugar and butter together using an electric mixer until smooth and creamy. Beat in eggs, 1 at a time, until blended in, then add in vanilla extract. Stir in the flour and baking powder until mixed in. Mix milk into batter until smooth.

Pour half the batter into the prepared pan; add half the apple mixture, then half the cinnamon sugar mixture. Lightly pat apple mixture into batter. Repeat with remaining batter, apple mixture, and cinnamon sugar. Lightly pat apples into batter and swirl the brown sugar mixture through apples using knife.

Bake in at 350 for 30-40 minutes, or until a toothpick inserted in the center comes out clean. 

To make the glaze, mix powdered sugar and together until well mixed, using just enough milk to reach the desired consistency. Let the cake cool for about 15 minutes before drizzling with glaze.

*Note: This cake is so full of apples and cinnamon/sugar that it falls apart easily. It is probably simplest to add the glaze and slice the cake while it is still in the pan. If you wish to remove it from the pan for presentation sake, do so very carefully. 
