An Apple-y Treat for Easter Morning!

I have many great memories of baking cinnamon rolls with my grandma growing up. Eating the dough (and sneaking more) turning the dough to rolls for our holiday meals and making some of it into cinnamon rolls. Grandma never measured her recipe, it just was a little of this and that to bring it together for deliciousness. Baking in the kitchen are some of the best memories I have of spending time with my grandma's kitchen.
Putting apple and cinnamon rolls together, gives me 2 loves at the same times. My recipe calls for chopped apples, but you could also use thin slices of apples instead, and the more apples the better.
Cinnamon rolls are a great snack, breakfast and dish to enjoy when you have family and friends over. The gooey sugars mixed with those delicious bites of apple will make your taste buds sing.
Apple Cinnamon Rolls
What you'll need:
1 3/4 cups warm water
1/4 cup oi
3 Tablespoons live yeast
2 small eggs, beat
5 – 5 1/2 cups flour
6 small Michigan Fuji Apples peeled, cored and cut into 1/2″ to 1″ pieces
5 tablespoons butter
1/2 cup brown sugar
2 tablespoons white sugar
1 teaspoon cinnamon
1/4 teaspoon allspice
2 tablespoons flour
2-4 tablespoons soft butter
While the dough is rising (or make this mix first), in a pot, add the apples, butter, brown and white sugar on low and allow the butter to melt.
Once the butter is melted, add the cinnamon and allspice and stir. Add the flour and stir ensuring everything is incorporated. Allow the apples to simmer and soften for 15-20 minutes. Remove from the heat and allow to cool.
In a large bowl, add the water, sugar, oil and mix. Add in the yeast and stir. Allow the mixture to sit for 10 minutes allow the yeast to grow.
Add the eggs and mix, then add half the flour and mix. You do not want to over mix, but want everything incorporated. Add a little flour at a time until mixture is not wet and forms a ball easily.
Place dough in a ball and cover in the bowl with the seal or plastic wrap (to keep it warm and allow to rise).
Allow dough to rise for an hour.
Preheat the oven to 350F. Place butter on the pan and pour 1/4 of the cooled apple mix on the pan and spread around.
Once the dough has risen, flour your counter surface and place the dough on the counter. Roll out the dough to a even thickness in a rectangle shape.
Spread the softened butter on the dough. Sprinkle (almost covering) the dough with cinnamon, then add sugar. Pour the remaining cooled apple mix onto the dough and spread it out evenly.
Roll the dough up from the long end, not the short end.
Cut into 2″ pieces and place into the pan. Once the pan is full and the oven is preheated, place into the oven and cook for 20-25 minutes, until golden brown.
Remove from the oven and flip onto the tinfoil (making the bottom the top). If any apple bits are left in the pan, scoop with a spoon and put them onto the cinnamon rolls.
Serve warm and enjoy.
