Apple recipes great for holiday guests

(DeWitt, Mich.) – Hosting guests this holiday season and wondering what to serve them? 

The Michigan Apple Committee has some recipe suggestions that will surely please your friends and family from breakfast to dinner.  

Easy Apple Breakfast Cobbler


Makes 4 servings

What could be better than warm apple cobbler for breakfast!  Put the ingredients in your crock pot overnight and wake up to the wonderful smell of cinnamon and apples.

4 medium-sized Michigan Apples*, cored, peeled and sliced 
¼ cup honey
1 tsp. ground cinnamon
1 tbsp. butter or trans fat free margarine, melted
2 cups low fat granola cereal

*Try Cortland, Gala, Ida Red, Johnathan, Northern Spy or Rome apples

1.    Place apples in a crock pot and stir in honey and cinnamon.  Top apple mixture with granola and drizzle with butter. 
2.    Cover and cook on low 7-9 hours or on high 2-3 hours.
3.    Serve warm and top with low fat milk or vanilla yogurt if desired.

Cheesy Apple Pizza

Makes 8 servings

Have the kids help make this delicious pizza for a quick and nutritious afternoon snack.  Serve it with a cold glass of apple juice!

1 regular prepared pizza crust (such as Boboli)
1 cup shredded Colby Jack cheese
2-3 Michigan Apples*, cored and sliced thin
¼ cup brown sugar
½ tsp. cinnamon
1 tbsp. all-purpose flour
1 ½ tbsp. butter or margarine

*Try Cortland, Empire, Gala, Golden Delicious, Ida Red, Jonathan, Northern Spy or Rome apples

1.    Combine brown sugar, cinnamon and flour in a small bowl.  Set aside.
2.    Sprinkle cheese over prepared pizza crust.  Arrange apple slices on top of cheese.  Sprinkle apples with brown sugar mixture and dot with butter or margarine.
3.    Bake at 350° for 20 minutes or until apples are soft and brown sugar has melted.

Roasted Pork Tenderloin with Apples and Onions

Makes 6 servings

This tasty pork dish makes a wonderful dinner with family or for company.  A great meal to celebrate the holiday season!

¼ cup balsamic vinegar
3 tbsp. pure maple syrup
4 medium Michigan Apples*, cored and cut into 8 thick slices
1 large red onion, cut into ½-inch slices
3 tbsp. olive oil
1tsp. kosher salt
1tsp. ground pepper
2 pork tenderloins (approx. 10-12 oz. each)

*Try Cortland, Empire, Gala, Ida Red, Jonagold, Jonathan, Paula Red or Rome

1.    Place one oven rack in top third of oven, and another rack in bottom third. Preheat oven to 450°. Make glaze: In a small saucepan, bring vinegar and maple syrup to a boil over high heat; cook, stirring occasionally, until mixture has reduced slightly, about 4 minutes. Remove from heat; transfer 2 tablespoons to a small bowl for drizzling, and set aside. Reserve the rest of the glaze in saucepan.
2.    On a large rimmed baking sheet, toss apples and onion with olive oil.  Season with salt and pepper; arrange in a single layer, and roast in oven for 15 minutes.  Remove from oven and toss.
3.    Meanwhile, line another rimmed baking sheet with heavy duty aluminum foil; place pork on foil. Season with salt and pepper; brush with glaze from saucepan. Return apples and onion to oven, on bottom rack.  Place pork on top rack; roast 10 minutes. Remove pork from oven; brush with remaining glaze in saucepan.  Roast until pork registers 150° on a meat thermometer, and apples and onion are tender, about 10 minutes more.
4.    Wrap pork loosely in foil and let set on a cutting board for 10 minutes.  Slice pork and drizzle with reserved 2 tablespoons of glaze.  Serve on a platter with apples and onions.

Harvest Apple Cake

Makes 12 servings

This is a moist and spicy cake that keeps well for several days.  A perfect addition to your next tailgating party!
 
2 cups whole wheat flour
¼ cup wheat germ
2 tsp. baking soda
1 tsp. cinnamon
½ tsp. nutmeg
4 cups (approx. 4 large) Michigan Apples*, cored, peeled and diced
3/4 cup sugar
3/4 cup brown sugar
½ cup canola oil
1 cup walnuts, chopped
2 eggs
1 tsp. vanilla

*Try Cortland, Empire, Gala, Golden Delicious, Ida Red, Jonathan, McIntosh, Northern Spy, Paula Red or Rome

1.    Preheat oven to 350°.  Spray a 9 x 13-inch baking dish with vegetable cooking spray.
2.    In a medium bowl, mix the flour, wheat germ, baking soda, cinnamon, and nutmeg; set aside.
3.    In a large bowl, combine apples, sugars, oil, walnuts, eggs and vanilla.  Add to flour mixture; stir gently to blend well.
4.    Spoon batter evenly into prepared baking dish.  Bake for 50 minutes or until cake pulls away from sides of the pan.  Cool cake in the pan on a rack.
