Zehnder's Heirloom Applesauce Cake

Ingredients:
  • 2 cups all purpose flour
  • 1 ½ cups sugar
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 2 tsp. ground cinnamon
  • ½ cup vegetable shortening
  • 2 cup applesauce
  • 2 eggs
  • 1 cup chopped walnuts (optional)

A recipe that dates back to the 1920s. It's simple and delicious!

Sift flour and sugar with the salt, baking powder, soda and cinnamon.
Add shortening and applesauce and beat at medium speed using an electric mixer for 1 ½ minutes.
Add eggs and beat for two more minutes.
Fold in the walnuts.
Pour batter into a greased and floured 9" X 13" cake pan.
Bake at 325°F for 35-45 minutes or until a toothpick comes out clean. Tip: When using a glass plan, cook for shorter period of time.
Allow to cool and sprinkle with powdered sugar.

The reason you folks are getting a DRY CAKE is because the recipe on Zehnder's recipe card FROM Zehnder's reads 2 1/2 cups applesauce not just 1/2 cup. Believe me, this way is absolutely delicious!

This cake is way too dry for an applesauce cake. It should be very moist.

I made two of these with chunky applesauce and they both came out dry. Does anyone know what the texture of this cake should be?
