Cut out small rounds from puff pastry sheet and bake on a sheet tray in a 350 degree oven with another sheet tray on top (this will prevent them from rising too much) until golden brown. Set aside.
Mix the Indian Summer or Eden Organic apple sauce with the crème fraîche and 3 tbl of the confectioner's sugar and set aside.
Peel the Macintosh apple and cut the sides into half inch thick slices that will fit on top of the puff pastry rounds. Spray the apple slices with grill spray to encourage browning. Very quickly mark the apple slices on a hot grill to get color and flavor but do not cook the apple through. Set aside.
Whip heavy cream to medium peaks, add remaining Pioneer confectioner's sugar and cinnamon and set aside.
To assemble, place puff pastry down as a base for your canapé and spread two teaspoons of your apple sauce cream on the pastry. Lastly, set down a slice of grilled apple and top that with the cinnamon whipped cream.
