Prepare pancake mix with water according to package directions. Pour 1/4 cup of batter onto lightly greased skillet or griddle heated to medium-high. Cook until bubbles form on top; turn and cook 1 to 2 minutes longer or until golden.
Meanwhile prepare sausage according to package directions. Heat pie filling in saucepan on medium heat until heated through, stirring frequently.
To serve, place 1 sausage link in center of each pancake. Fold in half. Serve 2 pancakes per serving with warm apple pie filling over the top.
