Pastry:
2 1/4 cups flour
1 cup butter flavored shortening
1 teaspoon salt
6-7 tablespoons ice water
Filling:
6 cups sliced, pared Golden Delicious apples
½ cup crushed gingersnap cookies
½ cup chopped walnuts
½ cup "Pioneer" white sugar
¼ cup brown sugar
¼ cup butter, melted
½ teaspoon cinnamon
¼ teaspoon salt
¼ cup maple syrup
In mixing bowl, toss flour and salt together. Cut in shortening until crumbly. Add water, mixing until dough forms a ball. Chill. Roll out half of pastry to fit a 9" pie plate.
Arrange half of the apples in pastry-lined pie plate.
Combine gingersnaps, walnuts, white sugar, brown sugar, butter, cinnamon and salt in bowl; mix well. Sprinkle half of gingersnap mixture over apples. Top with remaining apples and sprinkle with remaining gingersnap mixture.
Roll out remaining pastry for top crust. Place over filling and flute edge of crusts to seal.
Bake in 350 degree oven for 35 minutes.
Meanwhile, heat maple syrup in small saucepan over high heat until it boils. Brush hot maple syrup over pie and bake 15 minutes more, or until apples are tender. Cool on rack.
