Black Bean Cakes with Applesauce Salsa

Ingredients:
  • 1 can (15 oz.) black beans, drained
  • 1/2 cup dry bread crumbs
  • 2 eggs
  • 1/4 cup chopped onion
  • 1 garlic clove, minced
  • 2 tablespoons packaged taco seasoning
  • 1 1/2 cups peeled, shredded Michigan Apples
  • 2 tablespoons chopped cilantro
  • Vegetable cooking spray
Applesauce Salsa
  • 1/2 cup Michigan Applesauce
  • 1/4 cup salsa
  • 1/4 cup low-fat sour cream
  • 2 teaspoons chopped cilantro

Place first 6 ingredients in food processor bowl. Using metal blade, process about 15 seconds or until almost smooth. Remove from processor bowl to mixing bowl and stir in Michigan Apples and the 2 tablespoons cilantro. Set aside.

Combine Applesauce Salsa ingredients and refrigerate.

Using ¼ cup measure, portion bean mixture into hot nonstick frypan coated with cooking spray. Shape into patties. Cook over medium heat about 5 minutes per side or until golden brown and set. Repeat spraying pan, if necessary. Yield: 4 servings

Variations: Substitute 1 cup finely chopped, drained, canned Michigan Apple slices for fresh Apples. Continue with above method.

Suggested Michigan Apple varieties to use: Empire, Gala, Golden Delicious, Ida Red, Jonagold, Jonathan, McIntosh or Rome.
