Swiss Apple Chicken Casserole

Swiss Apple Chicken Casserole, from The Nutritionist Reviews, is simple to make and loaded with creamy Swiss cheese, Michigan apples, butternut squash and celery for a hearty and delicious family meal!

We were recently up at my parent's farm in the Thumb of Michigan for the weekend and it was so exciting to see all of the apples getting ready to be picked soon. 

My 2 year old daughter and I had a blast going around and trying each kind of apple. She is fruit crazy like I am and we could not get enough of it. 

The honeycrisp apples, yellow delicious, red delicious and a few other kinds of apples are looking great. The trees are fully loaded this year. Every year can be hit or miss depending on the weather and this year is a hit. I can't wait to chomp into some of the apples.

This Swiss Apple Chicken Casserole is a family favorite that I have been eating my whole life. My mom would make it and I remember requesting it often. It is simple but so good. There are not too many savory recipes that I make with fruit but this one is awesome. The melty Swiss cheese along with the rich flavor of the celery and butternut squash with the slight crunch of the apples is the perfect combination.

Swiss Apple Chicken Casserole

Prep Time: 10 minutes
Cook Time: 50 minutes to 1 hour
Servings: 8-10

•    1 pound boneless, skinless chicken breasts cut into about 2 ounce pieces
•    2 cups butternut squash, cubed, microwaved until partially soft
•    1 1/2 cups celery, chopped
•    1 large Michigan apple, diced
•    1/4 cup raisins
•    1 6-ounce bag of stuffing mix
•    2 cans low-sodium cream of mushroom soup
•    1/4 cup milk
•    1 cup shredded Swiss cheese
•    1 teaspoon black pepper

1. Preheat oven to 375 degrees.
2. Mix all ingredients together (except for black pepper and Swiss cheese) in a large baking dish.
3. Top casserole with Swiss cheese and black pepper. Cover with aluminum foil.
4. Bake for 50 minutes to 1 hour or until chicken is cooked through and cheese is melted.

This casserole uses Michigan apples that I picked up at the grocery store. Any variety will work, but yellow delicious apples are great for their tenderness and sweet flavor.
