Apple and Oat Breakfast Bars from Chocolate Slopes

As a registered dietitian I like to focus on providing healthy food for my family and readers, and apples are an easy sell when it comes to nutrition. With only around 100 calories per apple and 4 grams of fiber you can’t go wrong.

Growing up in Michigan I have so many fond memories of hand-picking apples at our local apple orchards and so it’s no surprise that Michigan is actually the third largest apple producing state in our nation. And thanks to controlled atmosphere storage apples are available almost all year round (August through June).

When it comes to fruit in my own house, I keep a constant stock of fresh apples because they not only have a decent shelf life, but they are so easy to grab and go! And although you can't go wrong with traditional apples and applesauce, I love to change it up by baking with apples like I did with these bars and these Whole Wheat Apple Raisin Muffins. I’ve also started experimenting with apples in savory dishes and they add a whole new level of deliciousness!

My kids LOVE when I make homemade snacks, especially when they contain their favorite foods like these apple bars. I also love making my own snacks and breakfast bars like these because I know what ingredients are in them and can make them as healthy as possible. It's a win-win!

Apple and Oat Breakfast Bars


Serves 6
A delicious combo of apples, nuts and sweetness from honey make up these delicious breakfast bars.
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

Ingredients
• 1 cup whole wheat flour
• 1 1/2 cups old fashioned oats
• 1 cup apples, grated
• 1/4 cup peanut butter
• 1/2 cup honey
• 2 eggs
• 1/2 teaspoon cinnamon
• 1/2 teaspoon vanilla extract
• 1/2 cup walnuts, chopped

Instructions
1. Preheat oven to 350°F. Spray an 8 x 8 inch baking pan with non-stick cooking spray.
2. In a large bowl combine all ingredients. Press mixture firmly into pan.
3. Bake for 30 minutes or until a toothpick comes out clean.
4. Allow to cool before cutting into bars.
