The beginning of a New Year means new resolutions. These resolutions could be more volunteer work, lifestyle changes, a better job, to save money or get fit with a better eating lifestyle. The most popular resolution is a better eating lifestyle with weight loss.
Eating healthy or at least maintaining a good balance should be on everyone’s bucket list. It should be maintained throughout the year and not just the beginning.
In my household it’s always about incorporating your fresh fruits and vegetables into each meal. It’s fun to see a toddler experiment with new foods and even better when they are not afraid to try it out. These apple tuna salad cups were a fun twist on your average lunch options. It’s the perfect lunch combination if you are looking for a healthy, delicious take on apples or tuna salad.
If you have leftover tuna salad just store in a container covered with saran wrap or an airtight container in the refrigerator.

Apple Tuna Salad Cups
Yield: 8 apple cups
Total time: 10 minutes
9 ounce can chunk light tuna, drained
¼ cup chopped walnuts
5 apples Michigan Jonagold apples, divided
½ cup chopped celery
¼ cup light mayonnaise
1/8 teaspoon ground black pepper
¼ teaspoon salt
In a bowl combine tuna, walnuts, ½ cup chopped apples, celery, mayonnaise, black pepper and salt. Stir until well combined.
Cut the remaining apples in half and using a knife or grapefruit spoon dig out the core and inside of the cup. Place a couple spoonfuls of the tuna salad into the apple cup.
