Cinnamon Pecan Apple Pancakes from The Nutritionist Reviews make the perfect weekend breakfast! They are whole-grain, protein rich and are topped with the most delicious cinnamon and brown sugar sautéed apples and pecans.

Weekend morning breakfasts are the best. They are not as rushed as breakfasts may be during the week and it is the perfect time to make a recipe that takes a little longer that you have been wanting to try. These cinnamon pecan topped apple pancakes are so delicious that you will want to add them to your regular weekend breakfast menu.

 

If you use gluten-free oats, these pancakes will be gluten-free. They are whole-grain and full of nutrients despite tasting like dessert. They are protein rich with the addition of Greek yogurt, eggs and pecans. They are fiber rich from the oats, apples and pecans.

These pancakes are topped with the most delicious sweet and cinnamon flavored pecans and sautéed apples. This recipe screams autumn but since apples are available year round, you can eat them anytime. If you need more food to feed more people, just double or triple the recipe.

 

This recipe is ready in just about 15 minutes and is sure to impress any guests that you are serving. It is approved by toddlers all the way up to adults. 

 

Cinnamon Pecan Apple Pancakes

Prep Time: 5 minutes

Cook Time: 10 minutes

Servings: 2

Ingredients

  • 1 cup oats
  • 1/2 cup plain Greek yogurt
  • 1/2 cup applesauce
  • 2 large eggs
  • 1 tablespoon maple syrup
  • 1 teaspoon cinnamon
  • 1/2 cup milk
  • 1 teaspoon baking powder
  • 1/2 large Michigan golden delicious apple, chopped

Cinnamon Apple Pecan Topping

  • 3 tablespoons butter
  • 3 tablespoons brown sugar
  • 1/4 cup chopped pecans
  • 1/2 large Michigan golden delicious apple, chopped

Instructions

1. Blend all ingredients for pancakes together (except chopped apples) until smooth. Mix in chopped apples.

2. Heat a skillet or griddle until hot and spray with cooking spray.

3. Using a measuring cup, measure about 1/4 cup of batter and drop onto skillet. Cook until the edges have cooked and bubbles are forming on the tops on the pancakes, about 2-3 minutes.

4. Flip and cook for 2 more minutes. Continue until all of the batter is gone. Spray the skillet each time that you make a new batch.

5. Meanwhile, in a sauté pan, add butter, brown sugar, pecans and chopped apples and sauté for about 4-5 minutes until apples are soft. Stir frequently so sugar and nuts do not burn.

6. Top pancakes with apple pecan topping. Enjoy!
